Krystale is the name of a precious gem in a pearl setting… it’s the perfect name for it! The hearty yet delicate oyster is grown and farmed in Gouville-sur-Mer in the Manche area. 

The K’Dual family have a passion for Normandy and have spent over 10 years working in suspended oyster culture, an innovative shellfish farming technique from Australia.

Unlike the traditional method of packing shellfish into bags on oyster beds, Krystale oysters grow hanging in nets and floating on the tide. The results speak for themselves: the oyster is meatier with a stronger flavour that’s both sweet and salty.

Krystale accounts for 30% of Huitres and Ko’s production and is exported all over the world!

The Normandy oyster « Huître de Normandie » has now been officially recognised as a Protected Geographical Indication (PGI), the 9th for a Normandy product. This recognition recognises the expertise of local oyster farmers, who make the most of the special features of the Normandy coastline to produce this exceptional shellfish.
